Ingredients

  • 2 lbs chicken thighs
  • 1 small onion
  • 3 cloves garlic
  • 3 adobo chilies in sauce (½ can)
  • 1 tablespoon chili powder
  • 1 teaspoon paprika
  • 2 teaspoons cumin
  • 2 teaspoons oregano
  • 1 bay leaf (optional)
  • 1 cup chick stock or ½ can Mexican beer
  • Salt and pepper
  • Small tortillas
  • Sour cream

Steps

1. Prepare chicken

Trim excess fat from the chicken thighs.

2. Make braising liquid

Slice onion and mince garlic. Combine with all spices, beer or stock and adobo chilies in the Insta-Pot.

3. Add chicken

Place the chicken in the insta pot and be sure to coat all sides with liquid.

4. Cook

Cook under high pressure for ten minutes. Your choice to natural or manual release.

5. Warm the tortillas

Wrap tortillas in a damp paper towel and microwave until warm, 30 seconds.

6. Assemble tacos

Assemble tacos on warm tortillas by shredding chicken, pouring a little braising liquid and adding favorite toppings (tomatoes, avocado, sour cream, cojita cheese)
